So what are some of your favorite recipes? The ones that are 'tried' and 'true' and just come out great? Post the dish and the recipe inshaallah.

My newest favorite recipe is a comfort recipe and it's easy to make but cooking the chicken and rice might take some time. So good! Makes about 6 to 8 servings. Sometimes I'll cut it in half if it's just me and my husband. I took this from the Food Network website, but altered it SLIGHTLY. It was a bit to runny and a bit too mayonnaise-ie for my taste. You can look it up on FoodNetwork if you want the original.
Chicken and Rice Casserole
Ingredients
- 2 (14 1/2-ounce) cans cut green beans, rinsed and drained
- 3 cups diced cooked chicken (I've made this recipe with just a cup and a half of diced chicken and it turned out fine.)
- 1 medium onion diced and sauteed
- 1 (4-ounce) can pimentos (Pimentos are basically canned red bell peppers that you cut up into little squares.)
- 1 (10 3/4-ounce) can condensed cream of celery soup
- 1/2 cup mayonnaise
- 1 cup cooked long grain rice (can also use wild rice, or 1/2 a cup of each)
- 1 cup grated sharp Cheddar
- Pinch of salt and pepper
Preheat oven to 350 degrees F.
Mix all ingredients together and pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly.
A light vegetable soup and a crisp and fresh salad on the side makes it a perfect meal for a cold winter day.

One of my favorite recipes would be sister musaafirah's enchiladas....LOL

Just wanted to say that I made this recipe a couple of days ago and it was wonderful mashallah. Jazaaki Allah kheir for the recipe sister Loving_Niqab, it was very delicious and my family loved it .

Aww, jazakhiallahu khayr sis Safae. Honestly, that was the last recipe I expected to see LOL.
Inshaallah, I want to try out that recipe sis Lovin_Niqab, I just have to wait until the next time I do my shopping to get the pimientos and cream of celery.

I'm so glad you liked it Safae! I found it to be a good recipe to prepare early, refrigerate and just pop into the oven when it's dinner time.

Assalamualaikum warahmatullah
At the moment, my fave recipe is the following (im writing from memory so I do hope its all there!)
Meatball Casserole
You need:
500g lamb mince
2 small red onion, chopped
3 medium sized carrots, chopped
400g good quality Tomato and Basil soup
6 half baked/bake at home bread rolls
Grated cheese to taste
Method:
Season the mince with salt, pepper, ground coriander and half a chopped red onion. Make about 12 meatballs equal in size, and using a little oil fry until brown and cooked through. (even if they are not cooked, they'll be going in the oven). Place meatballs in an overproof dish, fry the onions and carrots till soft. Place the veg in the ovenprof dish too, and pour over the soup. Slice the bread rolls and arrange on top, cook in oven for about 15mins (or according to the bake bread instructions). Finally, top of with grated cheese sprinkled to taste, place under grill until cheese is bubbly and golden.

This the fish and rice i cook soo much of late....dh is soo much into fish
Im not good with posting receips because they are too long, and i hardly measure anything.
Ok so i ussually take fish, without bone a slightly big peace...fillet it is but with the skin at the bottom *understood*? yeah then put it flat on the baking dish...ussually diagonal it dosent fir my sheet...then on the sides i put frys, the ready ones from the supermaket and add mixed veges i use the frozen ones. The i pour a tomamto sause i made earlier. Basically tomato paste and salt and all the spices u intend to use...paprikka ginger blackpepper cumin etc. then when its all mixed together and cooked. then pour kerma all over the dish...plently of it ..i use the 200ml box.
Then put that in the oven at 200 degress for say 20mins or untill fish is tender and everything is blended nicely. At this point the smell is irresistable. sometimes i add sliced onion and greenpepper for extra aroma.
Then comes the famous somali rice. I will try to explain but i dont measure anything still lol
Wash the desired amount of rice ad soak it for an hour. while its soakig grate two good sized carrots..one if the rice is a lil. Dice onions, take ginger raw one and peel then take garlic like 5 to 6 pieces and crush them togethr (garlic and ginger(.
after the hour is up drain the rice compeletly....mix the carrots and diced onions ad the desired amount of oil in a pot and let the carrot cook through..emitting a orange color..add the ginger and garlic mix, and spices..cumin black peeper corriander and 2 pieces of maggi chicken stock...stir this together...by this time u have a separate pot with boiling water. then take the rice and add on the pot..the first one and stir this really well in order to blend everything together...then add the boiling water....untill its covering the rice properly and then some. check to taste the salt and adjust accordingly.
Let the rice cook untill there is no more water floatig...decrease the heat to very very low...cover the pot with alluminium foil.and close tightly. let it stay the for 20mins or prop it in the oven. again at this time the aroma is breath taking!
serve with salad.
(some people add raisin towards the end with the rice...and i sometimes add green peas at the beginning but not with this receipe.)

PS. i dont know what kerma is in eglish...its food cream.?

I make great salmon steak . I take bread crumbs (usually a mix of white and wheat), melted butter, olive oil, salt, garlic, pepper and usually green herbs (thyme, mint, oregano, basil, parsley). I slit the steak up the middle length wise, but only the thick part. then I stuff the slit and cover the whole thing with the stuffing. I dot it with a little more butter if necessary and broil far from the heat until the salmon is done. MAsha allah. Delicious everytime. Now I have a new salad that I like to make as a side. I'll have to find that one, because I use a recipe for the dressing. This is one DH asks me to make for guests.
I also make a great fusion chicken recipe (DH is Palestinian and I'm from Miami so, is a little shami/ a little cuban First I make a mojo to marinate the chicken: saute a decent amount of garlic and very thinly sliced onion in a good amount of olive oil--but don't let it get golden, you just want it soft. Add sour orange juice (if you can't find sour orange, you can blend lime or grapefruit with orange juice), salt to taste. Let it come to a simmer. Then I marinate the chicken in that. I make the hashwi (stuffing) shami style (well not exactly, I had to add raisins) . Saute pine nuts and/or slivered almonds till golden (watch carefully as they start to color) then remove and set aside, saute minced onions, saute the rice, baharat, add some raisins pepper, salt, add chicken stock and cook the rice). I stuff the chicken with the hashwi, baste with the mojo criollo while its roasting (I preheat the oven up to 425 and then after the chicken is in for 10 minutes, turn it down to 350. You can broil it for a minute to brown it at the end). Zaki. MAsha allah. I serve this one to guests as well. I don't know why the flavors blend so well together.
They are both good in that you can prep ahead and pop in the oven.

I have a good recipe for potato gratin that I would like to share with my sisters. I made it up and it tastes great mashallah, I just don't know the exact measurments as I tend to just eye ball everything lol.
Ingredients:
1. About 3 lbs potatoes, skin off, and sliced (not thin but not thick) boiled in salted water
2. some ground beef, I would say about 3/4lb
3. 1 large onion diced
4. Salt+pepper+cumin+pinch of cayenne (If you like your food spicy of course) This is to spice up the ground beef.
5. Bechamel sauce (1stick of butter+flour+milk+parmesan cheese)
6. Shredded cheese (I use a mexican blend of 4 cheeses or you can use whatever you have on hand)
Method:
While the potatoes are boiling, Mix the ground beef with the spices and set aside. Fry the onion in a little oil until golden and add the ground beef until fully cooked and all the liquid evaportates. Set aside. After this you would want to make the bechamel sauce, melt the butter in a medium sauce pan, add flour, I would think about 2 tablespoon or maybe a little bit more, I just eye ball it to make a roux, Stir the mixture well and let cook a couple minutes while stirring, after that add the milk, some salt and pepper, and the parmesan. Again stir it until the milk is hot and the mixture thickens. At this point you could start assembling. Grease a 9x13 glass baking dish, arrange half of the slice potatoes, bechamel sauce, and ground beef mixture, then cover with the next bash of potatoes, ground beef, and finally bechamel. Put the shredded cheese on top and stick in the oven until the cheese is bubbly.
I made this yesterday and paired it with the chicken and rice casserole. It was a good hearty meal for a cold winter night. Sorry if I didn't give exact measurments because this one is made up.
ps. I always make it and it comes out good alhamdulillah.

Honestly I dont like anything that I cook. Everyone tells me I am a wonderful cook!! Alhumdililah!! But I have trouble enjoying it....Dont get me wrong I eat it I just dont think it is so wonderful!! I have never been a picky eater so I think it is just in my head!!! Maybe I just get bored however I am looking forward to what I am making tonight!
I have so many recipes mainly in my head so I dont have exact amount of ingredients!!
Today I am making turkey and broccoli lasagna rolls....
cook lasagna noodles until tender but stil firm
meanwhile brown lb ground turkey and med onion
drain
add chopped broccoli and a little water bring to a boil and cover let simmer about 5 minuntil broccoli is alsmost tender drain
In mixing bowl add 1 beaten egg and one cup ricotta cheese and a little thyme
Stir in broccoli mixture
Spread over lasagna noodles and roll up place in baking dish seam side down
Spoon spagetti sauce over lasagna rolls
cover & bake 375 for 30 min or until heated through
Sprinkle with parmesan cheese before serving
Yumm!!!
