I have 2 brownie recipes. One is for dense, fudgier brownies:
1 stick of butter
1 oz unsweetened chocolate (baker's is fine)
2 bags chocolate chips (I prefer ghiradelli 60% cocoa)
3 eggs
1 cup sugar
1 cup flour
1 cup chopped nuts (optional)
Preheat oven to 350 degrees (Fahrenheit)
Melt over low heat:
1 stick of butter
1 oz. unsweetened chocolate
1 bag chocolate chips
In a bowl beat:
3 eggs with 1 cup of sugar for about 1.5 minutes
When chocolate mixture is completely melted, whisk into egg mixture.
Stir in one cup of flour. Add 1 cup of chopped nuts (optional) and 1 more bag of chocolate chips (the additional chocolate is required!)
Pour into 9x9 pan (you can spray pan with pam, or line with parchment paper and spray with pam) - if you use a larger pan, just cut down the cooking time about 10-15 minutes depending how much bigger it is.
Bake for 50-55 minutes.

The second is for slightly fudgey and cakey...to make cakier brownies, increase flour to one cup.
9.7 oz of Scharffen Berger 62% chocolate semisweet, chopped (or use another premium chocolate...I use 6 oz Scharffen Berger and 3-6 oz of Dagoba Conacado with chiles and cocoa nibs)
1 1/2 sticks of unsalted butter, cubed
3 large eggs, room temperature
1 cup minus 2 tablespoons sugar
pinch of kosher salt
1/3 c. all purpose flour
1 1/2 cups coarsely chopped nuts (optional)
1-2 tablespoons of cinnamon (optional, but gives a nice warming effect in your mouth and is great if you add the dagoba chocolate mentioned above)
Preheat oven to 350 degrees.
Butter and line a 9 x 13 pan with parchment paper
Melt butter and chocolate in a large bowl over a pan of gently simmering water (i sometimes place in microwave in 20-30 second increments, stirring in between, until melted). Stir until smooth.
Place eggs, sugar in salt in a separate mixing bowl and beat until combined. Beat in chocolate mixture. Fold in the flour until fully incorporated. Add nuts if using.
Pour batter into pan and bake 25-30 minutes until toothpick comes out clean.
